This is a very simple affordable recipe that can be done in very little time.  I came up with this recipe when I was shopping at Aldi just a few days after the start of Fall.

I was in the produce aisle and noticed all these beautiful apples. Honey Crisp apples were on display, and I thought to myself, “Hmmm, I wonder if I can do a simple dessert with these beauties?”

I’ve never baked with honey crisp apples before, so I had no idea if they could withstand the heat of the oven and not turn to mush.  I just took a chance, and the results were incredibly delicious and very comforting on a dreary rainy Monday night.

My usual go to recipe is an apple crisp topped with oats, flour, butter, brown sugar…etc. Then as I wandered down the aisle where they keep the cold specialty items, I spotted a package of Sea Salt Caramel Chocolate Chunk Cookie Dough. Eureka!  I found something even better to create an apple cobbler kind of dessert.

Here’s a simple recipe to create this Autumnal comfort dessert.

Note:  I used the 6-cup rectangular Pyrex baking dish, but I think you’ll be fine with the 8x8 Pyrex baking dish.

INGREDIENTS:

3 Huge Honey Crisp apples peeled and cubed, or 6 small apples of your choice.  Granny Smith’s work very well in baked goods

2 tsp cinnamon

2 tsp pumpkin pie spice

1/2 C Brown Sugar

2 tbl flour

The juice of half a lemon

16 oz package of Aldi Sea Salt Caramel Chocolate Chunk Cookie dough or the cookie dough of your choice.

3 tbl of jarred salted caramel (optional)

Cooking spray or 2 tbl of butter to grease an 8x8 baking dish

Heat oven to 350.  After you peel and cut your apples, squeeze the juice of the half a lemon over the apples. It’ll keep them from turning brown.

Mix the apples, cinnamon, pumpkin pie spice, brown sugar, and flour and toss the apples until they are completely coated.

Spoon the mixture into a greased glass baking dish.

Drizzle salted caramel over the apples (optional)

Take small pieces of the cookie dough and place them all over the top of the apple mixture until it’s completely covered.

Bake for 45 minutes, or until the top is golden and the apples are tender.

Tip:

It goes great with a scoop of butter pecan or vanilla ice cream.  Aldi’s ½ gallon of ice cream is only $2.49
