Miller Lite Grillin’ Time Recipes: Carl’s Veggie Salsa
Summertime at the Jersey Shore is perfect! It’s the perfect combination of sunshine and summertime fun with big giant slabs of Rat Rock. As part of our Miller Lite Grillin’ Time event, enjoy some of the Rat Pack’s favorite recipes to toss on the grill.
Carl Craft’s Veggie Salsa, What You Will Need
- 2/3 peppers (red/yellow/orange)
- 2 large red onion
- 3 large tomatoes
- 4 ears of corn, shucked
- 2-3 jalapeño
- Olive oil
- A Few Limes
Step-By-Step
Heat grill
Wash and cut ingredients, peppers in half, seeds and whites removed. Tomatoes in half. Onions in large slices, jalapeno in half (remove some seeds if you want to reduce heat).
Toss in olive oil and drop on the grill. The peppers can get super charred, the same with tomatoes. Red onion caramelized on the outside. Jalapeno well done. Corn roasted.
Remove all from the grill. Put the peppers in a bowl, covered to loosen the skin, then peel the peppers and tomatoes. Careful, it’s hot. Let it cool down.
Using a very sharp knife, slice into salsa-sized pieces. Combine all and refrigerate until cool. Add salt and pepper to taste and the juice of at least one lime. Stir.
Scoop with tortillas and enjoy.
