New Jerseyans love food trucks! Food truck festivals are extremely popular here in New Jersey. For a lot of people I know, it’s a “Must Go To” event. When I attend one, I usually can determine who has the goods by the length of the line of people.

Back in 2022, my colleague, Jimmy Steal mentioned attending the Food Truck Festival at Monmouth Park Racetrack and that on one of the hottest days of the year, Cousin’s Maine Lobster had, without a doubt the longest line out of any other food truck. If there are 40 people in line waiting to order food on a day you can literally fry an egg on the pavement, then you know the food is to die for.

When I compile and post these lists on social media, I always get called out for “forgetting” a crowd favorite. I really do appreciate the heads up, and the introduction to a place I either didn’t know existed or a place that I haven’t heard much about. So thank you for any feedback you post.

Owning a food truck is no easy job. There are lots of moving parts and many expenses.

Licenses & Permits

You’ll need a business license to operate your food truck in a specific city or state, and a health permit from your local health department. If you want to sell alcohol, you’ll also need a liquor license.

Equipment

You’ll need a food prep area, washing station, and storage space for dry goods and paper. You may also need a POS system to manage transactions and inventory, which can cost between $1,500–$3,000.

Operations

You’ll need to consider how to manage your day-to-day operations, including staff, inventory, and technology. You’ll also need to make sure customers can pay you however they want.

Marketing

Food truck marketing is important to help your business succeed, and it involves more than just advertising. You should focus on your product and what makes it unique and consider the value your customers get and how to price accordingly.

Business Plan

A business plan can help you define your goals, identify your target market, and map out the steps you need to take to achieve success.

Other considerations include:

Upkeep, maintenance, gas, and rental payments

Supplies and ingredients

Insurance & other expenditures.

I may be missing a few and I’m sure food truck owners will let me know. Please keep in mind that if you don’t like a particular food truck on the first try, don’t slam them on social media, they may have had a bad day. Either give them another shot or just move on. The public will let them know they aren’t doing a good job by not showing up. Running any small business is stressful enough, being a hater makes it worse. Like I said earlier, if people don’t like it they won’t come back.

  • Cousins Main Lobster

    This nationally known locally owned lobster truck can be found are all over the state at a variety of locations. You can visit their brick & mortar at 800 Ocean Ave Asbury Park and enjoy one of their famous lobster rolls. or you can head to their website to find out where they’ll on the days you’re in the mood for lobster. Try the lobster tots, they are a big favorite.

  • Del Toro Tapas - 181 Drum Point Rd - Brick, NJ

    Professional chefs running a gourmet food truck serving TAPAS – Authentic cuisine from Spain. Marinated grilled shrimp, grilled sausage with chimichurri and tostones, seafood paella, patatas bravas, croquetas, skirt steak and more.  Follow them on Instagram to see where they’ll be next.  They do a beautiful spread if you’re looking for someone to cater your next event.

     

     

     

  • Five Sisters Food Truck - Tuckerton, New Jersey

    Voted best burger truck in America, twice! Best caterer in Ocean County 4 years in a row! Ranked #16 of 101 food trucks in America. These folks have several more accolades, too numerous to list. Mr. & Mrs. George Miller and their 5 daughters are the incredible team behind the success of this food truck.   • Dan's Waffles - Based in Pennsauken, N.J.

  • Uncle Sal's Egg Rolls- Verona NJ

  • Traveling Tomato Wood Fired Pizza - 40 Kerry Lynn Ct, Williamstown, NJ 08094

    This truck, like Cousins Maine Lobster usually has one of the longest lines at any festival they show up at. They also do quite a few private catered events and the reviews are stellar.   • Shore Good Eats N Treats - 120 W Sylvania Ave, Neptune City, NJ 07753

    I see them show up at quite a few events on the Jersey Shore. In addition to the mobile catering truck, they have the place in Neptune where they make these amazing cheesesteak egg rolls, along with delicious breakfast sandwiches, chicken & dumplings and their famous desserts like their famous loaded donuts. The PB&J donut is a fresh baked donut filled with Creamy Peanut Butter Icing & Grape Jelly. Topped with Peanut Butter Icing & Crushed Nilla Wafers.  Here’s the Website.

     

  • No Limits Cafe & Food Truck - 418 NJ-35, Red Bank, NJ 07701

    I’ve never been to the cafe, but I have visited the food truck at a few Middletown events.  The food isn’t the only thing getting attention. Their mission is magical. They are a non-profit cafe that employs adults with Intellectual Disabilities. Our mission is to EMPOWER adults with Intellectual Disabilities by providing jobs and job training to help them lead fulfilling lives within our community and to increase awareness of their potential!” They serve everything from juicy hot dogs to creative grilled cheese sandwiches. The soups are homemade hearty bowls of goodness. The steak chili is just what you need on a cool day, and the “Big Country 235” (In Honor Of Officer Bill Kennelly) a roast beef sandwich with caramelized onions, herb aioli and Monterey Jack is incredible.   • Eat My Balls NJ Gourmet Café/ Food Truck - 199 Market St, Elmwood Park, NJ 07407

    Some have referred to their rice balls as the best in N.J. In fact, they say they have the best rice balls in N.J. Claiming that their not your Nonna’s Arancini. Some options include: ” THE SOPRANO ” -savory sweet and spicy sausage, peppers and onions. “THE IRISH BALL” -corned-beef, cabbage and potato with dijon mustard on the side. ” ITALIAN STALLION ” – braised short rib – Italian style ” BROCCOLI CHEDDAR ” – shredded broccoli with melted cheddar center.   • Big Johns Gourmet Burgers Food Truck - Based in Plainfield, N.J.

    I heard about this food truck from a guy sitting next to me at Jake-A Bob’s in Union Beach. He was telling me about the big Keyport Music and Food Truck FEASTival being held on Saturday, August 31st a picturesque Waterfront Park. He talked about how big and juicy the burgers from this food truck are and how John has about a dozen different burgers to choose from. The burgers are 6.5 ounces of Angus shoulder cut chuck. My new friend recommended the Sunny Side Up Bacon Cheeseburger – this is a burger with the works, featuring that 100% angus beef patty with melted American cheese, crispy bacon and a sunny side up egg topped with romaine lettuce, tomato, sauteed onions and a pickle.   • Rolling Pita - Wykoff, N.J.

    The Rolling Pita is a food truck serving Mediterranean favorites like gyros, falafel ,hummus, salads, kebabs and more. Hire them for your next catering event and make sure to check out their website to see where they’ll pop up next.

     

     

     

     

     

  • Cubano X-Press Food Truck - 340 Belleville Ave, Belleville, NJ 07109

    Delicious Cuban pressed sandwiches and Caribbean food on wheels. If you live near near Bellville, the store is currently taking catering orders for your next private event.

    Thinking about the marinated pork, ham, Swiss cheese, pickles, mustard, and a touch of their special mojo sauce. Try the caliente version with that has Havana Heat sauce with pepperoni added. The roasted corn and yuca fried complete the meal.

  • Big Swerves BBQ - 201 Broadway, Westville, NJ, USA (Behind Westville Brewery)

    South Jersey turned me on to Big Swerves’s by talking about how tender his ribs are, how tender the brisket is, and how flavorful the mean beans and mac & cheese are. The Jerk sliders are also something special. Click HERE to see the menu and follow them on Instagram.

     

  • Ohana Grill Food Truck - 65 Grand Central Ave, Lavallette, NJ 08735

    If they’re not whipping up some local favorites at the restaurant, they’re out there feeding locals & tourists at a bunch of festivals here in the Garden State. It’s a taste of Hawaii at the Jersey Shore. For starters, check out the Spam fried rice . If you think you don’t like Spam, you’ll change your mind after eating Ohana’s Spam fried rice. The truck is famous for crispy fish tacos, crab cake sliders, and short rib tacos topped with chili slaw and chipotle aioli, all huge sellers.  Lately I’ve been hearing good things about the warm lobster roll.   • Boardwalk Bites - Based In Red Bank

    If there’s anything that signifies Summer at the Jersey Shore, it’s boardwalk food. This food truck serves up Jersey style boardwalk food at festivals and private parties all over the Garden State.
