Great bowls of mac & cheese on the Jersey Shore aren’t as difficult to find as one might think. If you’re offering me a list of options of places to grab a hearty dish of creamy mac & cheese, you have my undivided attention.
The very first thing on my long list of comfort foods is a big hot creamy bowl of cheesy gooey goodness, or as the rest of the world calls it, macaroni & cheese.
The last few generations grew up with that famous blue box that contained a package of orange powder shoved into the middle of the box that contained tiny little pasta. But as time went on, our palates matured and searched for variations of what was at one time considered a simple pleasure.

Macaroni and cheese lovers here in New Jersey have a list of their favorites. It may be their mom or grandma’s homemade version, their own homemade concoction, or a version created by one of the thousands of restaurants across the Garden State.
The mac & cheese we are most familiar with other than the blue box, contains cheddar cheese, milk or cream, and salt, pepper and maybe a few other spices such as garlic.
How Has Mac & Cheese Changed Over The Years?
In the 21st century, it’s a whole different ballgame. Now we’re being offered mac & cheese with a whole bunch of different cheeses. I have a recipe that contains 8 different cheeses. It sounds ridiculous until you put that first forkful into your mouth. If heaven had flavor, this recipe is it.
I’ve seen recipes that call for bleu cheese. I love bleu cheese but not in a dish of mac & cheese. I’ve used cheddar, Velveeta, parmesan, provolone, gruyere, Swiss, Muenster, Asiago, and mozzarella. Bleu cheese doesn’t belong in the mix.
