I am always thankful for another day. When I wake up every morning, I am thankful to be surrounded by the people I love. I am thankful for the roof over our head, and the ability to pay for it. I am thankful for the food on our table, and I pray for those who constantly struggle to feed their families.
On Christmas, I am especially thankful for the option of not having to cook. Don’t get me wrong, I have a love affair with my kitchen, but sometimes it’s all too much. Should I travel to see relatives who are 120 miles away? Should I travel up North only to be stuck in traffic? I’m sure some of these things run through the minds of many.
Complete transparency here, this year, I am traveling to Long Island to see my family and have dinner with my best friend and her family. I will be cooking. I’m doing the side dishes and the desserts.
This year’s showstopper dessert will be an Italian Rainbow Cookie Cheesecake. Hopefully it comes out the way I envision it,
But what if you’re not in the mood to cook? What if you can’t cook? Do you get anxiety because there are too many people to cook for?
Then why not dine out on Christmas Eve or Christmas Day.
