Jambalaya, baby! At first glance, it looks like a lot of ingredients – but that does NOT equal a lot of work! We’re gonna chop some stuff and throw it all in the slow cooker for a few hours; and with 30 minutes to go, add just 2 more ingredients – BAM, you’re done!

You’ll be the hit of the Big Game party, a Mardi Gras party… or really an any dang time ya make this. Let the good times roll, or should I say, “laissez les bons temps rouler!”

Ingredients

  • 2 boneless skinless chicken breasts (cut into bite sized chunks)
  • 1 pound andouille sausage links (sliced like coins)
  • 1 pound shrimp shelled + deveined (medium or large)
  • 1 green bell pepper (diced)
  • 1 medium white onion (chopped)
  • 3 celery stalks (sliced thin)
  • 28 ounces diced tomatoes
  • 2 cups chicken broth
  • 1 Tablespoon minced garlic 
  • 1 Tablespoon oregano
  • 1 Tablespoon cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon cayenne
  • 1 ½ cups instant white rice

Most recipes call for 2 bay leaves – but I didn’t do that here. 😉

Instructions

  • Cut all ingredients as stated above.
  • Place chicken breast, sausage, bell pepper, onion, celery, can of tomatoes, garlic, chicken broth, cajun seasoning, paprika, oregano, and cayenne (& any additional spices) in your crock pot. Mix together.
  • Cook on low for 5 hours or high for 3 ½ hours.
  • Once jambalaya has cooked for 3 ½ to 5 hours, add shrimp & rice and cook for 25 – 30 minutes (or until shrimp is pink).
  • Serve and enjoy!

Notes

  • You can substitute andouille for smoked sausage or kielbasa.
  • Be sure to use uncooked shrimp that is peeled & deveined.
  • You can use instant rice (as we did) or long grain white rice, but you would need to make long grain rice according to its packaging.
  • This makes a huge batch – if serving at a party, I suggest instant rice; if you’re making it for meals for a few days, maybe use long grain.
  • NOLA will probably hate this suggestion, but we at The RAT like to go rogue… if eating it for several meals, change it up with a dollop of sour cream!
