Mexican Hot Chocolate Cake For Rob’s Birthday
Whenever someone here at The WRAT has a birthday, I try to make them a cake to let them know they’re appreciated. I rely on our Marketing Director Jackie to let me know when someone is about to celebrate a birthday because Jackie is good at keeping track.
A couple of weeks ago, our Promotion’s Assistant, Rob celebrated a birthday and was robbed of a Rockyn Robyn creation because I didn’t have enough advance notice, so the cake had to wait until today.
Rob is well known for his obsession with hot sauce, hot wings, and any edible item that’ll burn the taste buds off your tongue.
What was I going to bake that would satisfy Rob’s love of capsaicin? I had figure out how to put together a cake recipe that has just enough heat without compromising the sweet.
A-ha, I got it, a Mexican Hot Chocolate Cake with some cinnamon and cayenne. I tested a recipe on Sunday and decided it was too spicy and not chocolatey enough, so on Monday I got back to work and amped up the chocolate and tamed the heat by adding less cayenne, and a tad more cinnamon,along with a pinch of nutmeg, and a pinch of allspice. The center of the cake is filled with cinnamon spiced buttercream, and is frosted with brown butter chocolate frosting.
