If you’re having a St Patty’s Day gathering and you’re looking to ditch the carbs, I have an idea how you can enjoy a delicious juicy Reuben without the guilt. How about a big bowl of Reuben minus the carbs?

A WHOLE LOTTA REUBEN IN A BOWL

1 TBLS  BUTTER
1 TBLS OLIVE OIL
1 LB SLICED CORNED BEEF
1 BAG OF COLESLAW MIX
1 C. SHREDDED SWISS
1 C SAUERKRAUT (DRAINED)
YOUR FAVORITE BOTTLED RUSSIAN DRESSING

In a large skillet over medium-high heat, heat butter and olive oil. Add corned beef and cook until sizzling, about 5 minutes. Add coleslaw mix and cook about 5 minutes until slightly tender. Stir in drained sauerkraut and season with salt and pepper.  Add the shredded Swiss cheese.

Cover and let cook until cheese is melted and bubbly, about 3 minutes.

Drizzle with dressing and enjoy.

This should feed 3 to 4 people.
